Totally Divine Chocolate Vegan Mousse

This is so simple and deliciously yummy and can be whipped up in under 15 minutes. Serve with choice of fruits and a good dollop of ice-cream/cream. This recipe uses avocados - which contain naturally good fats; over 75% of avocados are good fat.
Ingredients
2 Ripe Avocados - I tend to use HASS avocados which although higher in fat content, have more flavour. The avocados must be ripe.
100g Dark chocolate
5 Tbsp of plant milk
4 Tbsp maple syrup or agave
2 1/2 tbsp cocoa, sieved
splash of vanilla essence
Directions
1) In a heat proof glass bowl siting above a pan of simmering water , slowly melt the chocolate
being careful not to overheat and burn the chocolate. Stir in the maple syrup, vanilla, plant
milk and cocoa to obtain a smooth texture.
2) Wizz up in a blender the Avocado flesh with the chocolate mixture until a smooth consistency
is achieved.
3) Divide the mixture between ramekins, glass dishes and chill for at least 3 hours.
4) Decorate as desired
Tip: Agave Nectar has a glycemic index of 22, so considered a low GI food and thus as a sweetener a healthy alterative to Sucrose.
